Hi, just joined this group. We have just built a barrel oven. It is in our outdoor party kitchen. The problem is that it is smoking from the oven door opening. We are using dried hard wood. any suggestions please.

Hello irene How about a photo, we like photos. Plus we will be able to have a look & maybe come up with an answer.
Does it have a chimney with a slide cut off for smoke control?
Anyway, enjoy the forum & tell us of your experiences in using your oven.

I agree, pop a photo up if you can.
If the wood is dry then excess smoke can be because you are trying to build the fire up too fast. Google upside down fire and give that a go. Only add more logs when the fire really gets going and even then, only small split logs, no more than one or two at a time. If you put loads on at a time or too large a piece, they will sit there smouldering for ages before being able to light.

We are using dried hard wood. any suggestions please. As per other answers, without a pic the chimney size/position has to be assumed good which leaves the wood and the oven itself. Good news really, as both are solvable: If either are damp, you'll get excessive smoking. If both are damp... Dry wood can absorb moisture if stored outside, if the 'just built' oven has yet to fully 'cure' it'll be a smoker till it dries. A moisture meter from ebay for less than a tenner will show if the wood is dry, and though they're designed for wood, you'll get a good enough reading from the internal brickwork too. At this time of year everything's damp outside. Persevere with curing fires and find a way to fully dry your wood (I stack mine on top of the boiler in perforated plastic crates) and the problem may go away. It may go away anyway in the summer!
