Try a search on Forno Bravo (US WFO forum) and you'll find their calculator which will do exactly what you want.

The spreadsheet is a good starting point but be prepared that theory and actual will vary so you'll need to adapt. None of my layers agreed with the calculated numbers of bricks, the early ones were under because of the arch void, the later courses are using more bricks and not declining at the rates suggested because I cut each brick 6 times (a bit excessive), also don't forget the floor or entrance/chimney area. The main Forno Bravo plan does state brick volumes, the building method uses half bricks with minimal cutting using home brew to fill in the gaps and backfill the vertical voids, this method is relatively quick and economical. Happy to be corrected but the spreadsheet is geared towards thin joint building involving a lot of cutting (700-1000 cuts), just about possible with a decent (Makita etc) angle grinder but much much easier with a professional saw. I'd recommend finding some reference builds matching your proposed build method and seeing what they used, the biggest pain is under ordering bricks.
