I have a good dough recipe if it helps.
500g bread or 00 four. 325g water 10g salt 5 yeast
Mix together, kneed for 10. Set aside for several hours. I actually use cold water and prove in the fridge the day before. Slows everything down.
Now, here is the important bit. Tip out of the bowl and divide roughly. 500g mix will give you 4 dinner plate pizzas. I sometimes double the mix to 1kg for having friends over.
Once portioned up, cup into rounds and set on a work surface or plates to relax for at least an hour - it's this rest that means when you come to shape the dough won't be fighting you to shrink back. Use a rolling pin and your hands to stretch.
Throughout all of this, use semolina to stop everything from sticking. From making your rounds to then rolling out. Keeps everything moving. Be careful though as if semolina gets on the floor it's slippery - which is why it works so well!
Hope that helps. Will allow you to get really thin pizza.
Don't overload the toppings and experiment with a bit of homemade garlic butter on a pizza for an appetizer and pesto on a pizza too.
