Hi all. Have been using a Vitcas oven for a few years, did my own insulation and render. All good so far. But am struggling to get a crispy bottom to a pizza. Appreciate this is first world problem but am wondering if anyone has added an extra heat transferring floor to increase the heat from the bottom?? Looking at getting terracotta tiles and fitting them on top of existing floor.
I use kiln dry logs and heat the oven for 30/45 mins every time, the top of pizza and edges I can get almost black inside 2 mins, but the bottom is warm/cooked but nowhere near like the top. I have tried leaving the logs in the centre right up to cooking and left embers on the floor for 10 mins then putting the pizza on straight after. But again no crispy bottom. It’s a real floor not a bodge job I promise. Just doesn’t maintain and transfer heat well,

It takes my oven around 2 hours to come up to temp, do you have an IR thermometer to check temps?

what size is your oven Bear, 30-40 mins seems very quick for oven to get up to cooking temp. mines 1m wide inside and takes about 2 hours.

Appreciate the longer the burn the hotter the temp but it heats really quick and cooks on top of the pizza in 2 mins. It’s the floor that doesn’t. So I guess patience is needed to get the crispy bottom. Do a couple of hours to warm the bottom. Will try. Thank you.

I get my floor to 450c and ceiling around 550-600 before cooking pizzas, they then take around 90 seconds to 2 minutes.
