probably a daft question but have not even seen one in the flesh so here goes.
If you want to be cheap and buy a second hand flue and only see 1m lengths, can you buy one and then cut it down to size?
what are the considerations, and will you require a new end bracket or something similar?

The ones Iv seen seam to have a rounded blocked end in between the skins ( both ends ) , I can't see why you can't cut it then put the cut side down , ( you would need to fill the void with something fire proof ) .

Don't think a gas flue will stand up to the demand as they tend to be ali or light weight stainless. Diameters are usually wrong (smaller) and there's no insulation if you get a balanced flue which tend to be the twin wall ones your talking about. Twin wall solid fuel flues are what you need to deal with the hot gas coming directly out of your oven. Cutting them is do-able but more problematic as they have a flange at one end and the inner is generally secured to the outer at the ends. You could make your own twin wall if you can get hold of a 150 (or whatever you need) steel internal and a section of 200 stainless and fill the void with vermiculite.
