Hand hammered wok straight from shanghai! Just need this bad boy seasoned then its a trip to chinatown newcastle for some lovely ingredients!

I actually bought it off ebay from a guy in shanghai called toast lol. Including postage, £30 odd quid, bit pricey for a pan but it'll last a lifetime. Ive seen 'hammered' woks in chinese supermarkets before but they are normally just machine pressed with a few dings in it. This looks proper manually made Seasoned it last night using a guide off youtube (never had a seasoned pan before). After cleaning, I wacked it on max heat till the whole pan went blue, then turned heat down, added oil and left for 15 mins, did this twice. Ive only ever used non stick woks before and this, once seasoned is a million times better. I cracked an egg to test, once it had solidified, it just slid round the pan, and you can use metal tools as well. After that, just made a basic stir fry. Well happy anyway and as long as I keep it lightly oiled in storage it should last forever.

I think you paid a fair price for a decent bit of kit. I'd love to own a wok like that......I paid £18 for a wok from Ikea (I think)....it always sticks.

I've seen some interesting comments recently on using a BBQ charcoal starter as a really hot heat source more akin to the gas burners used in chinese restaurants.

Thats actually a good idea, tbh my cooker is a cheap argos beko thing, and the biggest burner does work really well with the wok, ill take some surface temps next time in using it with my infra red thermo.

Another advantage of the BBQ starter method is that you can add wok cooking to your array of other outdoor cooking arrangements: bbq, wfo, smoker, tandoor etc
