I'm interested in recipes that use Rose Veal. It's fairly new to us here in the states, but I know over your way it's been around for quite a while. Does anybody have any recipes they could share?

I would say rare and keep it simple and enjoy the meat. Possibly throw a knob of butter into the pan last thing.
I am sure some of our resident walking cook nooks can assist with more specific recipies tho.

......my favourites are....veal cutlets (look just like pork chops, but paler) fried in butter, served with a couple of fried eggs.....or veal escolopes.....thin slices of veal cut against the bias of the cut, dusted in seasoned flour, dipped in egg wash and covered in Japanese breadcrumbs.....then shallow fried for about 5/6 minutes on each side.
