Hi guys, here's a good bit of advice with all this wet weather we've been having, don't go straight for a big cooking session if you haven't used your oven for a while, try and have a couple of fires to drive the moisture out a day or two in advance, I've just been burning off some old sticks this evening and yesterday to get things dried out and so hopefully the oven should get to temp quicker tomorrow Cheers Marcus

I had a decent warming fire last night, with no door on it, 24 hours later the dome was reading 85 degrees, walls 75 and floor 60. I've currently got lots of jalapeño peppers in there drying and with a pro q cold smoke generator to turn them into chipotle
