Hello Scooterboy.......welcome aboard
This is the perfect place to say hello. Once you decide on what type of pizza oven you want to build, you can start a new thread in that relevant section (you'll get a lot more response as well)....we can then advise you on what mortar is needed.
There are 3 main types of oven........Pompeii...similar to a fire-brick igloo.....Barrel/Vault oven....a half circular vault, and a clay oven. Research (or copying other people) is the best way to go.
Please let us know what type of oven you would like to build, and we can advise further.

Nice! T5 for the daily, and the Li for the fun! I used to have an Li125 Series 3, a TV175 and many other bits and frames to fill a 8x10 shed. Sold the lot for £300 15+ years ago..... A small frame 50 and 90 before that. That lot is probably worth near £10k now! AAAARRRRRRGGGGHHHH Oh well, surfing is my passion now, but i still hanker for an Innocenti GP200. I'm gradually chipping away at the wife, what with the cost of fuel these days. Be a nice get to work ride! Looking forward to your build, mate!

.....how these threads go off on their own tangent sometimes.....all good fun. The closest thing on two wheels that comes anywhere close in comparison to the beasts we build is the Kawasaki 750 KH...2 stroke.......now that is one beast of a motorcycle!

A mate of mine has a Kwaka 750 2 stroke if you want a go... But you cannot beat Welsh motorcycles Terry. Bown were building quality bikes long before Kawasaki were thought of.
I reckon Panthers were nearest to a wood burning oven - bloomin' great single cylinder engines that sucked and blew...
Vive le thread wandering - Wanderer made great motorcycles btw.

Scooterboy, welcome to the forum. I'll follow your build with interest, given that's the area I grew up in (went to Snaith secondary School).

Scooterboy
I just realised that I didn't even answer your question......whoops.
Mortar......or homebrew for a Pompeii or Barrel/Vault oven.
3:1:1:1....sand, hydrated lime, powdered fire-clay and ordinary (OPC) cement.
Change the ratio of sand to 4,5 or 6:1:1:1 if the sand is very fine.
Normal cement can be replaced with Ciment fondue.....or "quick drying cement" if using a jig (indispensable tool) on a Pompeii build.

Cheers
