The dough recipe then: 8oz plain flour 1tsp salt 0.25 tsp sugar 1.5 tsp dried yeast 1beaten egg 3 oz water hand hot 1tsp of smoked paprika (my addition)
Water in basin, whisk in sugar followed by yeast then leave this to one side for 10 mins or so to get a nice frothy head.
Sift the flour, salt and paprika in mixing bowl and pour in the frothy mixture and the beaten egg and mix to a dough (you may need to add a spot of warm water) - you should have a soft dough that leaves the bowl clean
Knead the dough on work surface for 10 mins - should go silky smooth and elastic Place the dough in a bowl -smear the surface with extra virgin (or a local slapper if you can't find one ;D) and seal the bowl with clingfilm - place in a warm place and leave for about an hour to double in size , ooooh errrr Mrs!
Knead for another 5 mins and its ready to use Makes 3 (9.5 inch) pizzas
