Freshly flushed with the success of my lavender bread I bought some wholemeal flour and tried to bake a loaf last week..................twas a complete and utter disaster. I used the same recipe as I do for my white loaves and clearly this is where I was going wroung, so, today I tried again but with 50% white flour and 50% wholemeal and ...............RESULT! decent crust and crumb and nice shape etc I gave it a bit of ooomph by adding a good teaspoon of smoked paprika and a teaspoon of dried mixed herbs................oh, and the salt was smoked salt (yummy from here www.halenmon.com/ ) - I would have to say that the herbs had no effect and seemingly disappeared though.

Brilliant!!!......thanks for posting the pic.
I enjoy a wholemeal loaf. Using wholemeal flour tends to always warrant more water and proofing than a normal recipe suggests.
Looking at your picture....I'm tempted to make one this evening. Mmmm maybe....
