....as promised I received some nice sourdough starter from Spinal through the post. It looked like 2 plastic bags with 100gms in each. I used 100 gms that same evening and made some nice wholemeal bread with it. The sourdough starter was then put in the fridge for a few days, then brought back out and refreshed for a few days. It started coming back to life so yesterday I baked a white and a wholemeal loaf. The sourdough starter wasn't going full pelt with it's action so I used a tsp of dried yeast with 1 tsp of sugar and made up to 60 gms with warm water which I split between the 2 loaves. Ingredients.. White loaf 500 gms strong white flour 1 tsp salt 2 tbls OO 30 gms made up dried yeast 50gms sourdough starter 300 gms water Wholemeal loaf as above but with wholemeal flour and an extra 30gms of water. Made the two loaves at the same time and turned them both out for kneading Gave them each a 5 minute knead and left to rest for 15 minutes Kneaded again for 5 mins and they were ready for first proofing After an hour or so I knocked them back and placed them on a tray for final proofing. Popped them into an oven at 200c for about 40 minutes. They got a bit co-joined in baking. Instead of breaking the 2 loaves apart, I sliced them apart to see the different doughs. It would be interestng to make rainbow bread, like a rainbow cake. You could even have different flavours added to give it a bit of a twist

Congrats The yeast should recover fairly quickly after the trip - give it two or three feedings over a week and it'll be back to life! I've decided that the flour makes a MASSIVE difference. Baked three loaves today with Caputo (blue) as it was all I had... they really took off, and look like they are much lighter than before. I'll update with pics once it's sufficiently cool (though I only have 1 loaf left as one got stolen by my other half in payment of her help today and one got stolen by a friend - both before they were cool!). You could plait three different loaves together..... Nearly rainbow !! Terry you are making me feel guilty as I have not mad bread for a few weeks as I have been making stuff for Christmas pressies must get my finger out .
