I've been reading about this Calabrian charcuterie for a few years now and have asked every deli owner in the west of England for it till I'm blue in the face. It's an Italian blend of pigs cheeks, belly, lard and chillies packed into square sausage casings. It's soft and you can smear it across your bread or pizza. The years of waiting have been worth it, I found some yesterday in Borough market and it is one of the finest things I have ever tasted. The subtle chilli, the creamy texture, it will make the finest pizzas. The block I bought was an eye watering £9 for 350g but a little goes a long way.

I am sure that wait rose sell it. If not that the it is really similar!! Mind you the one in ash ford doesn't.t stock it and I can never remember the name to ask them to get it in!!

Hedgemonkey I've never heard of Nduja but it sounds like something that I would try if I ever came across it. Have you ever thought of having a go at making it yourself?. When we move I am so hoping that I can have a walk in larder!! It will be chock a block full (I hope ) with homemade meats and cheeses !! If it is the paste that I bought from wait rose it is seriously good stuff I stuffed one lot into bread rolls went fab with soup

I'm addicted to the stuff, goes great on a pizza, Zizzi do it on a lovely pizza piccante when I'm away with work, I used to get it from waitrose, but they stopped selling it, it was an unearthed product, I have been hassling the owner of unearthed to bring it back. As I said, grab it off nifeislife If you're in/near West London, they even let you go down to their warehouse and browse to buy... The downside is everytime I go there I end up spending a fortune... (last time I went to buy a bag molino caputo I came out with almost 200£ of other stuff) M.
