looks very good, I do not have much space in my fridge so large dough balls will need to prove else where, given you want the long rise for flavour I think I would need to have a sourdough starter and then add the toppings to get close.
don't suppose this Italian pizza cook book is getting an official translation any time soon?

Great Article find Terry.
I am a big fan of Italian food and Italy . When i am in Italy I always only eat where local people will eat in suburbs etc off the tourist tract.
There is a lot of dishes that have things in that we think wouldnt be Italian like potato pizza that is because we so conditioned to famous mainline Italian dishes . Ive had potato on pizza before and its lovely .
As most of the people on this forum knows the most basic pizza is the best what more basic than Pizza with potato on . Yum Yum. My WFO is still not finished but helped the neighbour to finish his this summer so might just fire his WFO tomorrow and do potato pizza on it . A nice winters meal.
