Trying the smoker I bought off ebay a while back . Today have only just managed to bring it over from blighty. So the plan is Smoked garlic ,lemon thyme lentil soup Hot smoked leg of lamb Smoky BBQ kidney beans Roasted toms, peppers and garlic
And if I can marry the smoking cupboard up Cold smoked cheese, rice, butter and paprika

Well I did try and post a before picture but its vanished !! The rice is for a risotto tomorrow but the lamb is for tonight, a def meat fest !! I have used my old smoking cupboard and made a tinfoil tube to take the smoke from the stack to my smaller tube, not pretty but it works!! Smoking with a mixture of pear, apple and walnut.

....looks.....and sounds really good. Do the French scowl at you if you put mint sauce on the lamb?......and vinegar on your chips.

p.s..Is it true that the word vinegar comes from the French for "sour wine"....vin-aigre?

So, you are smoking the uncooked rice? I'm sure I'm not getting the hang of this smoking ... would it be the same with a cold smoke? Loving all this

I hot smoked the lamb and then some peppers and tomatoes . But I attached the wooden cupboard ( to the right in the photograph) to the stove pipe by attaching a cut off oar with holes drilled in it . The bit with the holes is pushed into the cupboard and for now I just wrapped the joint tight with tinfoil. This is my cold smoker using the smoke from when I am hot smoking or bbqing .. I cold smoked , mushrooms, salt, butter, cheese, paprika , flour a saucepan of bbq beans and some chillies . Will try and post a photo of the cupboard with the door open.
