It’s great to use leftovers as much as we can to avoid waste, but mostly because you can make really fantastic meals out of them. The pork was wonderful and crisp but still juicy, reminiscent of crispy duck. Using a handful of the leftover Porchetta fried until crisp in a teaspoon of rapeseed oil in a hot wok, I added 2 tbsps of char sui sauce and cooked for 30 secs until the meat was coated and crisp. A handful of stir fry greens and chopped chillies and cooked for another 30 secs, followed by enough noodles for each person. I splashed in a little fish sauce and soy sauce, a squeeze of lime juice and a dash of Sriracha chilli sauce, and cooked for a minute more. I finished off with a little coriander leaf, a drizzle of sesame oil and Sriracha. Cheers Marcus

As my OH is half Vietnamese/half Chinese I often have meals such as this either prepared by herself or family. Although common in Vietnamese food I have a big dislike for coriander so never use it.
Stir fry greens are incredibly simple yet also fantastic tasting. If you haven't had it before I can recommend two incredibly simple takes.
1) finely chop lots of garlic (and I mean lots) - about 4-5 cloves per person. Fry in oil until starting to colour ever so slightly. Add in portion of green veg per person and fry for 2-3 minutes on a high heat and serve immediately. I usually keep the veg simple with this one, either straight up pak choi, or broccoli.
2) Place pak choi in a pan of simmering water for a minute. At the same time, heat a tablespoon of oil, 2 tablespoons of soy sauce and 1 table spoon of fish sauce until starting to smoke. Drain pak choi, place in bowl and immediately pour of the hot oil.

I love this sort of food it is so fresh , zingy and flavoursome and afterwards you feel stuffed but healthy !!
