I decided to give my mobile Wood-fired oven a good spring clean today and start a curing fire as the oven has not been in use for many months. Last week I gave it a lick of paint so today was spring clean day. It's a compact little oven but opens up on both sides. One side is for the gastro trays and prep table and the other side has a double sink which creates it's own hot water. The Tardis...... Gastro and prep-side... Sinks and cleaning area side... I fired the oven to about 240c.....didn't want to take it that high but this Bushmans oven gets up to heat quite quickly. This is how I operate the oven.....with the fire left flickering over to the rear right leaving the full depth of the oven for pizza making... I shan't be using the oven for any events this year (apart from a few private events). The oven will be used as part of my Clay oven build and bake courses. www.celticwoodfiredovens.com/Clayovenbuildingcourses.html . Because of our inclement weather conditions I have indoor space available should the weather stop us from using the outdoor space... The modular oven is a Bushmans oven from Jay Emery of www.dingley-dell.com ....It is one of his first mobile ovens and is many years old but always performs well. Terry

you where not kidding when you said you had a nice location for the course, look at the scenery..
you can tell I am a city boy, a few trees and am impressed, very impressed actually.

Hello Fadridrocky.......welcome to the forum.
The outside surfaces had a good clean with a cream cleaner and then with a food prep area cleanser. Unfortunately I can't help with your question as the only thing I don't clean is the oven.
The oven gets sterilised when it has been fully fired. I occasionally pass a steel brush over the hearth but usually when the coals are pushed to the side for pizza making...or removed for bread baking, the hearth is always spotless and sterilised.
