Hello everyone,, brand new to all of this and have decided to open a shop with a woodburning oven. I am looking for help and advice on how to do it. The first question I need answering is: are there risks related to acid in the chimneys of wood burining ovens? I was advised this (perhaps conveniently) by a commercial equipment dealer. Do you mean that you are opening a pizza restaurant or takeaway with a wood burning oven to cook on? And are you concerned about risk to customer health?
Either way I’d make your first stop your local planning department to ask all your questions to. I’m sure there’ll be a long list of what is and isn’t allowed aside from the health factor.
