Yes it is!! I actually just watched the programme last night ( have not had time before) I liked that beer wash he did , that would go lovely on bread with the cheeseboard. I wish that he would also say that if you are short of time you could need it with a ken wood or bread machine etc because I can see some people saying that they have not got the time for that!! ( despite the fact that its like going to the gym!! )

All this need to knead is blx though......autolyse then a couple of stretch and folds and you're golden. OK, so I looked up 'autolyse' and the method sounds interesting. I'm going to have to try it! As for anyone working the dough with gloves on, excuse me? The whole idea of wearing gloves should be an anathema - in order to know what state the dough is in, you have to feel it. IMHO. Washed hands (up to the elbow if necessary) should be enough. If Paul Hollywood can do for bread what Mary Berry has done for cakes, then I say carry on. And as far as it goes, I'm sure I'm not the only one who could watch him making bread every day! And Conic - if you're getting that sort of bread, you definitely need to change your method.

www.abreadaday.com/?p=1159Although, I start with the yeast in the water then add all the other ingredients ( inc the salt!......trust me it doesn't mess with the yeast). The dough doubles in size and is glossy and stretchy in half an hour

Hmm. Interesting discussion going on here. I enjoyed the first episode - nothing earth shattering but it was quietly honest and no-nonsense, and I thought it was a relief from the intelligence insulting contrivance of the Fabulous Baking Brothers series.
But as you say Conic, there are things that are passed on like memes that are just unnecessary - the need to knead and the oooh don't let the salt touch the yeast business. Strange!

Hence my original comment. Good one tonight, love the huge mixing bowl he had! Never done flatbread, might give it a try.

Some of the recipes in the programme are in his book which came out about 18 months or so ago. The only thing with the book is that soe of the amounts shown in the recipes seem to be a bit out, I think the publishers probably corrected his recipes to get them ok for home bakers but didn't quite get it right! There are still soe lovely recipes though
